Slow cooker orange chicken...EPIC FAIL

I am a slow cooker novice, this recipe was my second attempt at being a good working mom who cooks fabulous meals and has everything under control...yeah, not so much.

I didn't know it was possible to screw up a slow cooker meal, really - it sounds simple no? You mix all the ingredients together, turn it on low and magic should create in the crock...well, its a crock of you know what.

This is what it actually looked like after 6 hours on low...yes, it resembles road kill. It was gritty and grainy, I could not eat it - the sauce was okay, so that was good over the rice (probably because I was starving).



So my friends...how do you stop things from over cooking in the slow cooker? I was so upset after this dinner that I threw all the left overs in the garbage - and there were a lot of left overs! I wasted my money and time shopping for the ingredients, thank goodness I had a big bottle of wine to wash down the sour taste this left in my mouth.

Tomorrow I am trying Gina's Crock Pot Chicken Taco Chili, everything is prepped and ready to go...hopefully we have an epic success this time around

Baby Boom...and a dilemma

Is it me or is EVERYONE either having a baby or have a newborn?? I took a quick spin through my favorite blogs and it seems that babies (especially baby girls) are on the forefront.

Oh, and I love you ladies - thank you for commenting, hope you can all start following again. I promise this time I wont go MIA. I feel terrible about missing the last year - there is so much I had to talk about and so much I could have shared with you but I simply didn't have the time.  But now, I am back at work - and what better way to spend my lunch break than with you?


I have a question for you Mommy's out there - would you turn your baby's car seat to be forward facing before their first birthday?


Here is my dilemma: Emma is 10 1/2 months old, she is approx 25lbs and 30" tall, right now her car seat is rear facing (we have an Eddie Bauer 3-in-1 convertible car seat).  She meets the age and height requirements to be forward facing - just not the age.

When I pick up Emma from daycare (i.e. my mom's house lol) she screams the whole way home.  Its about a 25 minute drive and there is nothing I can do to console her.  She doesn't pull this crap with my husband though - only me.  I don't know if she just misses me (obviously!) or if she is afraid of the dark or what.  Normally she sleeps in the car, but at 5:30pm she's not tired at all.  She is just so used to spending all her time with me and since I have been back to work everything is different.

So - I was thinking if I turned her seat around to face forward it might make the commute a lot more enjoyable for the both of us. It just breaks my heart to hear her crying and do nothing to comfort her.

Gettin y'all up to speed



Okay, so I am not southern but for some reason "getting y'all up to speed" seemed like the appropriate title for this newest post.  So what's been going on with me since I last visited blog land?

  • Brought my gorgeous Emma into the world on Thursday February 25th, 2010 at 6:08pm

  • Went on maternity leave from work,was home for 11 months, returned to work on January 3rd 2011.
  • Did lots of activities with Emma during the summer, lots of little road trips and bonding family time
  • Enjoyed a wonderful Christmas, everything for Emma of course...
  • Here are couple of pictures

Remember me? I have been MIA for a long long long time...I think I stopped blogging when I was just a few weeks pregnant - in the summer of 2009. Its now 2011, I have a gorgeous 10 1/2 month old daughter and life could not be better.

Truth be told, I stopped blogging because I simply did not have the time...and I really started to miss all of my followers and all the blogs I was reading. I hope to catch up with all of you again, can't wait to see how you're all doing and can't wait to share my new life as working mommy with you.
